Roasted Pear & Ginger Waffles



Serves 4 (2 waffles per person)



For the roasted pears:


3 Bosc pears, sliced into 1/2-1 inch vertical pieces, seeds removed


2 tablespoons coconut sugar


1 tablespoon vegan butter, melted


1 teaspoon vanilla extract

For the ginger waffles:


1 cup cashew milk


1 teaspoon apple cider vinegar


2 tablespoons olive oil


1 teaspoon almond extract


3/4 cup cornmeal


1/2 cup gf flour


2 tablespoons coconut sugar


1 tablespoon baking powder


1/4 teaspoon salt


2 teaspoons fresh grated ginger


2 teaspoons cinnamon 






Melted Chocolate


Maple Syrup


Slivered Almonds





Preheat oven to 400 F. 

Lightly grease a baking sheet with coconut oil. Set aside.


In a medium sized bowl, combine coconut sugar and melted vegan butter. Toss pear slices in the butter mixture and coat all slices thoroughly. Spread pears evenly on the prepared baking sheet and bake for 10 minutes, or until pears a lightly golden brown. 


While pears are roasting, start on your ginger waffles.


For Waffles:


Combine cashew milk and apple cider vinegar to create a “buttermilk”. Set aside and allow to rest for at least 5 minutes. In the meantime, combine all dry waffle ingredients until well incorporated, including grated ginger. 


Return to your vegan buttermilk and add olive oil and almond extract. Mix well to incorporate fully. 


Pour wet buttermilk mixture into the dry mix and stir to combine. Be sure to stir all lumps and clumps out of the batter. Allow the batter to rest for 5 minutes.


Preheat your waffle maker (I used the Dash Mini Waffle Maker)and lightly grease with coconut oil.


Pour 1/4 cup of batter into the waffle maker and cook for 1 minute + 30 seconds to 2 minutes...or until golden brown. Repeat this process until the batter is finished.


Top your waffles with maple syrup, roasted pears, berries, melted chocolate, and slivered almonds!
