3 cups unsweetened almond milk
2 cups light coconut milk
1 cup yellow corn meal
1-2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 cup maple syrup or agave
Add almond milk and coconut milk to a medium sized pot & bring liquid to a boil. Gradually stir/whisk in the cornmeal, until the full cup is added. Continue to stir to prevent lumps from forming.
Reduce heat to medium and cook for about 5 minutes until thickened. Add cinnamon, nutmeg, and maple syrup. Stir to combine.
Adjust the consistency if needed with extra almond milk if desired.
Remove from heat and serve hot! Top with your favorite fruit &
