vibrant veggie bowl for 1!

 

 

Serves 1

Ingredients:

 

Salad Components:

2 cups roughly chopped baby kale 


2 tablespoons diced red onion

 

1/3 cup thinly sliced radish 

 

1/3 cup chopped cilantro

 

1 tablespoon roasted sunflower seeds

 

1 tablespoon golden raisins, unsweetened

 

1/3 cup barlett pear, diced or sliced

 

1/2 an avocado, diced

 

1/2 cup cooked brown rice


*optional* 1/2 cup roasted potato

 

Lemon Dressing:

2 tablespoons lemon juice

 

2 tablespoons liquid aminos

 

1/2 tablespoon maple syrup

 

1/2 tablespoon garlic, diced

How-To:                                                                                           

Add all salad components (except for avocado, brown rice, and roasted potato) to a medium sized bowl, toss to combine. Set aside.


For dressing: Add all ingredients to a small bowl and whisk to combine. Ensure that everything is well incorporated.

 

Add about 1-2 tablespoons of dressing to your kale mix and toss/massage to work in the dressing. 

 

To Build Your Bowl: Place brown rice at the base of a bowl & top with the coated salad mixture. Add avocado chunks and roasted potato. If you'd like, drizzle the remaining dressing over the entire dish.
